Shrubs: What you need to know

What Is A Shrub? A shrub is an old-fashioned summer drink made from a mixture of fruit and sugar that is steeped in vinegar until it’s mellow. To serve, add a splash of the shrub syrup over ice cubes and top with water or tonic water. Add vodka for a shrub cocktail. Healthy and refreshing, it’s no wonder shrubs are making a comeback.
Cherry and Mint Shrub: Mix 2 c. crushed sweet cherries, ¾ c. fresh mint leaves, and ½ c. of sugar. Refrigerate for 8 hours or more. Strain and mix with ½ c. red wine vinegar.
Strawberry Shrub: Mash 2 lbs. of berries, mix with 2 c. sugar. Mix syrup w 2 c. strawberry vinegar.
Pear Shrub: 2 lbs. pears, peeled, cored, mashed; mix with 2 c. br. sugar, 1 star anise. Mix syrup with 1 cup of white wine vinegar.
Refrigerated syrups keep about 2 months.
